View BottleThe English call it “allspice” because it tastes of cinnamon, clove and nutmeg at once. In Hiemalis, allspice condenses the winter-spice profile into a whole.
Allspice is not a blend but a single dried berry — with an aroma spectrum other recipes need three spices for. In punch, gingerbread and indeed winter gin it provides depth: it fills the spaces between the louder spices and holds the profile together.
Cinnamon and cloves are the soloists of Hiemalis — allspice is the orchestra behind them. It amplifies both without stepping forward and gives the gin the depth that separates a good winter gin from a perfumed one. It shows most clearly in a gently warmed drink.

No — despite the German name “Piment”, allspice is not hot. The berry tastes of cinnamon, clove and nutmeg; chili is an entirely different botanical (in Rarner Gin).
