Cinnamon: Winter, Distilled

Few spices conjure images as instantly as cinnamon: Advent, a warm kitchen, long evenings. In Hiemalis we distil exactly that feeling.

Why cinnamon works in gin

Cinnamon brings sweetish warmth without sugar — ideal for a distillate. In the still its essential oils join juniper and citrus into an aroma reminiscent of pastry while staying dry.

Combined with cloves, allspice and orange it creates the classic winter profile — the foundation of our Hiemalis.

Cinnamon in Hiemalis

Hiemalis — Latin for “wintry” — carries cinnamon in its very concept. It leads the spice ensemble while hibiscus adds acidity and lavender fragrance. A gin for the cold months that also surprises as a summer aperitif.

Serve it in a tonic with an orange twist — or gently warmed with apple juice as a winter punch.

Frequently Asked Questions

Does Hiemalis taste like Christmas biscuits?

It evokes them but remains a dry gin: the cinnamon warmth needs no sweetness — juniper and citrus keep the profile fresh.

Can Hiemalis be drunk warm?

Yes — gently warmed with apple juice or in a hot gin punch, cinnamon and cloves unfold fully. Do not boil, just warm.

Is cinnamon gin only for winter?

No — in a tonic with plenty of ice and orange, Hiemalis works all year. The spices then act like an aromatic bitters accent.
