View BottleLavender is a botanical with character: dosed right it lends a gin elegance and perfume — in Hiemalis it joins wintry spices to form a profile of its own.
Few botanicals polarise like lavender: too much and the gin recalls soap; too little and the floral idea evaporates. The right amount, though, lays a fragrant veil over the distillate that makes spices feel softer and rounder.
We macerate the lavender with the other botanicals and distil slowly — so only the fine, flowery aroma remains.
In Hiemalis the lavender forms the floral counterpoint to cinnamon, cloves and orange: it brightens the spiced winter profile and keeps the gin from feeling heavy.
It shows most clearly on the nose — swirl the glass briefly before sipping. In a tonic, Hiemalis harmonises with a lemon twist that carries the lavender.
